Regional Recipe – Thai-Style Iced Tea

It’s inevitable; spend enough time in hot, hot Thailand and you’ll become addicted to their delicious thirst-quenching sweet iced tea and Singha beer.  While we can’t help with a recipe for the latter, we can share how to make your own Thai iced tea at home. 

Ingredients:
10 star anise pods
3 tablespoons of sugar
8 cups water, divided
1 vanilla bean
15 black tea bags
½ cup heavy cream
½ cup sweetened condensed milk

Directions:
Combine star anise pods, sugar, and 1 cup water in a small saucepan. Scrape in seeds from vanilla bean; add bean. Bring to a boil, reduce heat, and simmer 10 minutes. Transfer to a large pitcher. Add tea bags and 7 cups cold water. Cover; chill at least 4 hours. Strain into another large pitcher. Stir in heavy cream and condensed milk until dissolved. Serve over ice.
