Recommended Recipe – Bananas in Coconut Milk
Known locally as kluay bod chi, this widely popular and simple dessert comprises bananas cooked in sweet coconut milk. Served throughout Thailand, this dish can be enjoyed either hot or cold.
Ingredients:
4 slightly green bananas
2 cups coconut milk
4 tablespoons of sugar
ΒΌ tsp cinnamon
Method:
Peel the bananas and cut into bite-sized pieces.
In a medium saucepan, bring the coconut milk to a boil. Add the sugar and cinnamon, stirring to dissolve.
Add the bananas.
Bring back to a boil, then turn down the heat and simmer for 2 - 4 minutes, until the bananas are tender but not mushy.
Serve hot or cold, sprinkling extra cinnamon on top if desired.
